Strawberry Marshmallow

Recipe

Ingredients:

Frozen strawberries - 200 g
Gelatin - 15 g
Powdered sugar - 150 g
Lemon - 1/2 pc.

Preparation:

1. Defrost the strawberries. Save the juice. Blend the berries into a smooth puree.
2. Add gelatin, let it swell for a few minutes (follow the instructions on the package), then add powdered sugar and lemon juice, mix and heat over low heat, stirring, until the gelatin is completely dissolved. Do not boil!
3. Now let the mixture cool to room temperature and beat with a mixer for 5-7 minutes at high speed until the mixture significantly increases in volume, becomes lighter and thick.
4. Line the mold with waxed baking paper, spread the strawberry mixture on the paper and smooth it out. Leave in a cool place, uncovered, to set for several hours.
5. When the mixture has set, turn the mould over onto a surface sprinkled with powdered sugar and remove the paper.
6. Cut into cubes, roll in powdered sugar and serve.
