Until the Middle Ages, cheese and cottage cheese were considered identical products; only in the Middle Ages was the recipe for traditional hard and soft cheeses precisely established, and cottage cheese became a separate product.

CHEESE SANDWICH MASS RECIPE

You will need: 90 g radish, 25 g each of butter and processed cheese, 5 g onion.

How to make cheese mass for sandwiches. Grate radishes, grind with butter and processed cheese, add chopped onion, add salt and mix.

RECIPE FOR CHEESE TARTALETS WITH MUSHROOMS

You will need: 8 slices of hard cheese, 6 champignons, 2 potatoes, 1 onion, 3 tsp sour cream, 1 tsp dried garlic.

How to make cheese tartlets with mushrooms. Boil the potatoes until done and mash into a puree. Place the cheese pieces in tartlet or muffin tins so that they cover the bottom and sides – break the cheese so that there is a minimum of empty space between the slices. Mix the potatoes and fried mushrooms with onions, put the filling on the cheese pieces in the tins, put another piece of cheese on top. Bake the appetizer in a preheated oven for 10-15 minutes until the cheese is completely melted and let cool completely at room temperature. Remove the resulting cheese tartlets from the tins and garnish with herbs before serving.

The preparation of such a spectacular snack is very simple, and you can use any filling to your taste, the main thing is cheese on the bottom and on top.

Always let the tartlets cool completely, warm cheese will not hold its shape well and when removed from the moulds the appearance of the snack will be spoiled.

SELF-MADE CHEESE SNACKS

This type of cheese snacks is also very common and loved. They can be both cold and hot: an example of the first option is cheese balls rolled from grated cheese with additives, the second is fried breaded cheese.

CHEESE BALLS RECIPE

You will need: 200 g crab sticks, 150 g hard cheese, 3-4 cloves of garlic, 2-3 boiled eggs, 1 pack of aromatic croutons or homemade small croutons, mayonnaise, salt.

How to make cheese balls. Grate eggs and crab sticks on a coarse grater, cheese on a fine grater. Mix the grated eggs and sticks, adding cheese passed through a press, mayonnaise, mix - the mixture should be homogeneous. Put the mixture on the palm of your hand with a spoon, flatten into a flat cake, put one crouton inside and form a ball, bread the balls in cheese. Before serving, cool the balls for 30-60 minutes in the refrigerator.

You will need: 250 g hard cheese, 200 g wheat flour, 100 g butter, 0.5 l milk, 3 raw yolks and 2 whole raw eggs, breadcrumbs, vegetable oil.

How to make fried cheese. Melt butter in a saucepan over medium heat, pour in flour while stirring, cook until thickened, remove from heat, pour milk into slightly cooled mixture so that it does not curdle, mix with a mixer until smooth, bring to thickening over medium heat, stirring, remove from heat, beat in 3 raw yolks, mix. Grate cheese on a coarse grater, pour into a saucepan, mix. Take a baking dish, put the prepared dough in a layer about 1-1.5 cm thick, smooth it out and put everything in the cold for an hour or more. Cut the dough into strips or squares. For breading, pour breadcrumbs, flour, 2 beaten eggs into separate bowls, you can also use corn or potato chips for this, crushing them. Roll the bars first in flour, then dip them in egg, then in breadcrumbs or flakes, immediately fry in hot oil until browned, place on a paper towel to absorb excess fat.
