There are a great many options for making pancakes, and each housewife has her own secret. RECIPE #1
CLASSIC
Ingredients
200 g cottage cheese 18% fat content
1 egg
2 tbsp flour
1 tbsp semolina
1 teaspoon vanilla sugar
2 tbsp cane sugar
Oil for frying
HOW TO COOK:
1. Mix cottage cheese, egg, semolina, vanilla and cane sugar thoroughly.
2. Form the cheesecakes to the desired size, roll them in flour and fry on both sides until golden brown.
*If you want the syrniki to be lighter and more dietary, cook them not in a frying pan, but put them in silicone molds and bake them in the oven.
*Never make syrniki from sour cottage cheese. If you want to end up with a tasty dish, use only a quality product.
* If the cottage cheese is a bit dry, soften it by adding sour cream, kefir or milk. This will make the mass more elastic.
RECIPE 2
WITH RAISINS AND WALNUTS
Ingredients:
250 gr. cottage cheese
3 tbsp flour
2-2.5 tbsp granulated sugar
1 egg
50 g walnut kernels
50 g raisins
HOW TO COOK:
1. Mix cottage cheese, egg, flour, granulated sugar and chopped walnuts.
2. Divide the curd mass into small balls (60 g each), form them into cheesecakes and fry them on both sides in a frying pan.
3. Serve with jam, condensed milk, sour cream or honey.
ADVIСE :
* To make the syrniki tender and melt in your mouth, you need to pay attention to the little things. For example, it is better to rub the cottage cheese through a sieve and only then mix it with the egg, sugar, and flour. And only then add walnuts or raisins.
* Before adding raisins, be sure to soak them briefly in water and then let them dry. To do this, place them on a napkin and squeeze them slightly. Thanks to this, the curd mass will not be liquid and it will be easy to form syrniki from it.
* To prevent the syrniki from burning, it is advisable to fry them over low heat in already heated oil.
RECIPE 3:
WITH CINNAMON AND VANILLA
Ingredients:
200 gr. cottage cheese
1 egg
2-3 tablespoons of sugar
a pinch of salt
a pinch of vanilla sugar
a pinch of cinnamon
2 tbsp flour
HOW TO COOK:
1. Mix the cottage cheese with sugar thoroughly, add vanilla, egg and flour. To prevent the dough from sticking to your hands, you can moisten your palms with water or vegetable oil.
2. Then form a “sausage” from the curd mass, roll it in flour and cut it.
3. Fry the prepared cheesecakes on both sides over medium heat.
ADVIСE :
*You can add whatever you want to the syrniki: raisins, finely chopped dried apricots or nuts. Just not walnuts! They will give the finished dish a bluish color and the syrniki will look unappetizing.
* You can also steam the syrniki, but then you will most likely get lazy vareniki. You just need to put the half-cooked syrniki in a steamer and hold until done.
RECIPE 4:
WITH SWEET SYRUP
Ingredients:
For the cheesecakes:
200 gr. cottage cheese
1 tbsp sugar
1 egg
100 g butter
1 tbsp semolina
a pinch of vanilla
For the syrup:
100 g raisins
100 g sugar
100 water
10 g cognac
HOW TO COOK:
1. Mix all ingredients thoroughly until a uniform mass is formed. Then lightly dust the table with flour, roll out the "sausage", cut it into equal pieces.
2. Then press these pieces on both sides so that they resemble discs and place them on a hot frying pan with heated vegetable oil.
3. After this, cover the pan with a lid and fry the cheesecakes on both sides until the semolina “swells”.
Prepare the syrup:
1. Bring sugar, water and raisins to a boil and simmer for a few minutes over low heat.
2. Add cognac and stir.
Pour syrup over the finished cheesecakes and serve with sour cream.
RECIPE 5
WITH FLAMBÈDED FRUITS
Ingredients:
250-300 gr. cottage cheese
1 raw egg yolk
1 tbsp semolina (or flour)
A pinch of salt
Granulated sugar to taste.
1. Mix all ingredients until smooth and leave in the refrigerator for one hour so that everything dissolves and acquires a solid consistency.
2. Form balls, roll them in flour, shape into cutlets and fry on both sides in well-heated ghee.
FLAMBÈDED FRUITS:
These could be apples, strawberries, etc.
1. Melt the sugar, add pieces of fruit, a little packaged juice (fresh juice is worse in this case) and heat. The main thing is not to overheat, so that you don’t get caramel. 2. Then add a drop of cognac and set it on fire. Stir, put on a grill so that the excess sugar drains.
ADVIСE :
*In summer, you can add currant leaves or fresh mint to the syrniki – it will be more aromatic.
