Why the French Eat Anything and Don't Get Fat

Everyone knows that the French eat a wide variety of food, including quite fatty foods, but they do not have such problems with excess weight as Americans, Germans or Ukrainians. But until now no one understood what the matter was. The French eat tons of cheese and bread, wash it all down with a lot of alcohol, but still do not get fat!
Moreover, they eat a lot, and from early childhood.
How then do the French remain slim and healthy when it seems that at the very least Camembert is eaten by everyone here all the time?
It turned out that dairy lovers have a different composition of intestinal bacteria. Their stomachs have an increased level of butyrate, an anti-inflammatory fatty acid. It helps it to intensively produce useful digestive enzymes. It has been proven that high levels of butyrate are the key to low cholesterol, excellent metabolism, and excellent prevention of obesity.
But here's the thing: not all cheeses are the same, and there are different ways to consume them. Americans and Slavs often add it to pasta and pizza, and make sandwiches out of it. For the French, cheese is a stand-alone dish that goes well with certain fruits and red wine. Well, the level of beneficial acids and bacteria in the gastrointestinal tract increases precisely when cheese is mixed in the stomach with polyphenols found in grapes and some other Mediterranean fruits.
Plus, the types of cheese are of great importance. The key to a great figure is brie and camembert cheese.
And most importantly, the French understand the importance of a balanced diet. And they very rarely - less often than we do in our countries - eat processed foods.
