Beetroot, avocado and arugula salad.
Ingredients:

3-4 pcs. baked beets
¼ cup toasted pine nuts
2 ripe avocados
300 g arugula
300 g semi-hard goat cheese
Sauce:

½ teaspoon finely grated lemon zest
1-2 tablespoons fresh lemon juice
2 tablespoons olive oil for dressing
sea salt, pepper.

Toasts with beetroot filling
Ingredients:

16 croutons of white bread or toast
4 pcs. baked beets
1 tablespoon olive oil
200 g feta cheese
arugula
balsamic vinegar
2 tablespoons brown sugar
salt.
Method of preparation:

Combine balsamic vinegar and brown sugar in a small saucepan.
Bring to a boil over medium heat and cook for 10-15 minutes.
The sauce should become a little thicker.
Grind the baked beets in a food processor until smooth.
Add olive oil and salt, mix well.
Spread the beetroot mixture on each toast and garnish with arugula and feta cheese.
Drizzle sauce over top.

Ingredients:

3 pcs. boiled beets
300 g lettuce
200 g goat cheese

Sauce:

1 tablespoon walnut oil
1 tablespoon maple syrup

Ingredients:

1 head of radicchio
200 g frisee salad
1 carrot
1 Burpees Golden Beet
1 Cipollini onion, quartered and lightly fried
¼ cup thinly sliced Asiago cheese
Sauce:

3 tablespoons olive oil
½ teaspoon sea salt
1 tablespoon freshly squeezed lemon juice
1 tablespoon rice wine vinegar
1 teaspoon grated lemon zest
½ teaspoon white pepper

Ingredients:

2 medium baked beets
almond
1 shallot
1 orange
1 blood orange or grapefruit
4 handfuls of baby spinach
3 boiled eggs
2 teaspoons pomegranate seeds
100 g fresh crumbly goat cheese
Sauce:

2 tablespoons olive oil
1 teaspoon wine vinegar
1 teaspoon honey
sea salt

Smoked Salmon, Beetroot and Asparagus Salad
Ingredients:

300 g boiled asparagus
150 g watercress
100 g smoked salmon
2 boiled beets
Sauce:

a pinch of grated horseradish
100 g natural yogurt
1 teaspoon white wine vinegar
black pepper
lemon juice
salt.
