- 1. Place the salmon fillets in a deep baking dish in one layer. Season each fillet with salt on top and pour vegetable oil over it. Brush each piece of fish with 1 tablespoon of sweet Thai chili sauce. Spread the sauce evenly over the surface and thoroughly coat the bottom and sides of the fillets. Cover the dish with a lid or cover with cling film and marinate in the refrigerator for at least 2 hours or overnight.
- 2. Preheat the oven to 200°C with the top grill. Line a baking tray with parchment paper and lightly grease with vegetable oil. Place the fish slices skin side down on the parchment. Brush the fish with the remaining sauce.
- 3. Bake the fish for 8 minutes. Remove the pan with the fish from the oven and brush the fillets with Thai sauce again. Return the pan to the oven and bake for another 5 minutes or until golden-caramelized. Serve immediately hot with a garnish of green onions.
- 4.To prepare the sauce: In a small saucepan, combine all ingredients until smooth. Bring the sauce to a boil, reduce heat to low, and simmer for 10 minutes or until the sauce thickens. Pour the hot sauce into a glass jar and refrigerate.
