PENNE RIGATE WITH BLUE CHEESE

INGREDIENTS:
400 g penne | 125 g Saint-Agur blue cheese |
4 shallots | 2 tomatoes |
1 tbsp dry white wine | 10 ml fresh low-fat cream |
2 tbsp. l. chopped parsley | coarse salt, black pepper |
PROCESS
- In a low saucepan with a lid, cook the penne in salted boiling water according to package directions.
- While the pasta is cooking, cut the tomatoes into quarters, remove the seeds and cut into cubes.
- Peel and chop the shallots. Place them in a small saucepan, add dry white wine and pepper. Bring to the boil and simmer for 2 minutes.
- Add the cream, stir and bring to the boil again, then simmer for 3 minutes.
- Cut the Saint-Agur cheese into cubes and add it to the resulting sauce.
- Turn off the heat immediately. Drain the penne and place them in a salad bowl.
- Pour over the sauce and add the concasse tomatoes.
- Sprinkle with parsley before serving.
