PENNE RIGATE WITH BLUE CHEESE

Type of dish: Main courses
Cooking time: from 10 to 30 min

INGREDIENTS:
400 g penne125 g Saint-Agur blue cheese
4 shallots2 tomatoes
1 tbsp dry white wine10 ml fresh low-fat cream
2 tbsp. l. chopped parsleycoarse salt, black pepper
PROCESS
  1. In a low saucepan with a lid, cook the penne in salted boiling water according to package directions.
  2. While the pasta is cooking, cut the tomatoes into quarters, remove the seeds and cut into cubes.
  3. Peel and chop the shallots. Place them in a small saucepan, add dry white wine and pepper. Bring to the boil and simmer for 2 minutes.
  4. Add the cream, stir and bring to the boil again, then simmer for 3 minutes.
  5. Cut the Saint-Agur cheese into cubes and add it to the resulting sauce.
  6. Turn off the heat immediately. Drain the penne and place them in a salad bowl.
  7. Pour over the sauce and add the concasse tomatoes.
  8. Sprinkle with parsley before serving.
