Homemade dumplings with fish. Very tasty and unusual.

Has anyone seen a person who doesn't eat pelmeni? Most likely, such strange people do not exist, because pelmeni are tasty and easy to prepare. Traditionally, this dish is made with meat filling, but alsodumplings with fish are no less popular, especially in the Far East.
It is believed that pelmeni were invented by the ubiquitous and inventive Chinese. However, their primacy is disputed by the Finns. Scientists agree that pelmeni were first prepared by nomadic peoples, who, for obvious reasons, ate mainly meat. Incidentally, this is probably how ravioli "came" to Italy.
How to cook fish dumplings?
For fish dumplings you will need:
- 0.5 kg fillet of pink salmon or any other red fish.
- 3 cups flour.
- Half a glass of milk.
- 2 eggs.
- A tablespoon of butter.
- A small onion.
- Freshly ground black pepper and salt.
Any dumpling starts, of course, with dough. First, pour 2 cups of flour into a deep bowl. Make a hole in the center of the resulting mound and gradually pour in milk diluted with warm water and a beaten egg. Knead the dough, gradually adding another cup of flour. Knead thoroughly on a board sprinkled with flour and leave for at least half an hour.
While the dough is rising, let's make the filling.
It is better to remove the bones from the fish rather than grind them in a meat grinder – this way the mince will be more tender. Fish dumplings are much juicier if you finely chop the fillet by hand rather than in a meat grinder. Add the onion grated on a very fine grater, the remaining egg, butter, pepper and salt to the minced meat. Mix thoroughly. The minced meat is ready. Now it's time to roll out the dough thinly, cut circles with a shot glass and make dumplings. Throw the bay leaf, peppercorns into boiling water, add salt and cook the dumplings in this broth for 7-10 minutes. Serve with sour cream, garnished with dill or parsley. This recipe for fish dumplings is quite simple, as they say, without any special frills. In addition to this, there are many recipes for fish dumplings with vegetables, meat, mushrooms, cheese and squid.
