Carrot jam with lemon: prepare a mysterious dessert

- 2 kg of sugar,
- 10 g vanilla sugar.

- For carrot jam with lemon, it is advisable to choose juicy lemons with a thin rind, then your dessert will not have bitterness. If the lemons have a thick rind, then remove the zest, clean from the white layer and seeds, leaving only the fruit itself.
- Peel the carrots, chop coarsely and mince them together with the lemons and zest.
- Sprinkle the carrots and lemons with sugar, mix and put on the fire.
- Cook the carrot jam with lemon over medium heat for 40 minutes, stirring occasionally to prevent burning.
- At the end, add vanilla sugar to the carrot jam and cook for another 5 minutes.
- Place the hot carrot jam with lemon into prepared sterilized jars and roll up.
- Turn the jars upside down, wrap them in a blanket and leave until completely cool.
- Store carrot and lemon jam in a cool, dark place.
