Italian classic: ravioli with mozzarella

Homemade mozzarella ravioli will add variety to your daily diet. Conveniently, ravioli can be prepared in advance, frozen, and then boiled as needed.

Cooking time: 25 minutes.

Ingredients:

Hard wheat flour - to taste
Eggs - 1 pc.
Egg yolks - 4 pcs.
Salt - 1 pinch
Water - 50 ml
Mozzarella - 125 g
Basil - 5 g
Thyme - 1 sprig
Cream - 200 g
Pesto sauce - 50 g

Preparation:

1. Knead the dough: add eggs, water, and salt to the flour. Leave the dough in a dark place for 45 minutes.
2. Prepare the ingredients for the filling – mozzarella, basil and thyme.
3. Finely chop the cheese and herbs, roll into small balls.
4. Roll out the dough into two thin layers. Lay out one layer of dough and sprinkle it with water. Distribute the balls over the dough and cover with the second layer.
5. Cut out ravioli using a mold. Cook the ravioli for 5-6 minutes. Place the ravioli in a frying pan, pour in the cream and pesto sauce. Evaporate the cream over medium heat until it reaches the consistency of a thick sauce.
6. Serve the ravioli with a slice of mozzarella and garnish with a sprig of thyme.
