Tortilla with potatoes (Spanish omelette)

Tortilla de patatas is not just a Spanish omelette, it is a legendary Spanish omelette! In Spain, you will be treated to tortilla always and everywhere! Competitions and championships are held on the preparation of this omelette! Every self-respecting Spanish neighbor has her own secret recipe for this omelette with potatoes!

INGREDIENTS
Potatoes - 100 g
Eggs - 3 pcs.
Onions - 100 g
Olive oil - 1 tbsp
Salt and pepper - to taste
METHOD OF PREPARATION

Peel the potatoes, cut them in half and slice them very thinly. Sprinkle with salt.

Peel the onion and chop finely. Pour oil into the frying pan. Heat over medium heat.

Add the potatoes and fry for 5 minutes, stirring constantly. Add the onion and stir well. Cover the pan with a lid and reduce the heat. Stir occasionally.

Break the eggs into a large bowl and beat with a fork until the yolks and whites are combined. Add salt and pepper. When the potatoes and onions are done, add them to the bowl with the eggs.

Add the remaining tablespoon of olive oil to the pan and heat over medium heat for about 1 minute. Pour the egg and vegetable mixture into the pan. Reduce the heat. Cook on the lowest heat for 15 minutes.

When almost all the liquid on the surface of the omelette has evaporated, turn it over and cook for another 5 minutes. Serve with tomato sauce!
