Cannoli with ricotta cream: a recipe for a delicious Sicilian delicacy.
Cannoli (or canolli) is a traditional Italian fried dough dessert that was first baked by nuns from Palermo. Therefore, the birthplace of the delicacy is Sicily.
Italians are rightfully proud of their cuisine, because over the centuries of its history it has brought the world a huge number of delicious dishes.
The word canolli itself is translated from Italian as "little tube". The dessert can vary in size depending on the traditions of the region. It can be as big as a finger or as big as a fist.
Italians consider this dessert to be winter dessert, as its filling consists of dairy products, which quickly spoil in the hot summer.

Ingredientsfor 4 persons:
250 g flour,
450 g ricotta cheese,
250 g sugar,
20 g of any candied fruit,
20 g pistachios,
150 g liquid dark chocolate,
a little Marsala liqueur,
powdered sugar,
salt,
vegetable oil for frying.
You will also need special cylindrical molds to give the cannoli the desired shape.
Add Marsala liqueur and 10 grams of salt to the flour. Knead until you get a dough. Wrap the dough in a cloth napkin and leave for about an hour.
Then roll out the dough with a rolling pin, cut into squares and wrap each square around a special cylindrical form for frying. Heat oil in a frying pan and put the cannoli to fry.
When golden brown, remove from heat and let cool. Meanwhile, mix ricotta with candied fruit and pistachios.
Carefully remove the cylindrical form from the cannoli and fill them with the resulting ricotta cream. Sprinkle with powdered sugar on top and you can serve.
To keep cannoli crispy, they are filled with filling just before serving or the tubes are glazed from the inside with melted chocolate and sprinkled with chopped pistachios. In addition to candied fruits and chocolate, various syrups, liqueurs or Marsala wine are added to the filling, and ricotta can be mixed with mascarpone.
