  • 150 g sugar
  • 20 g gelatin

Preparation:

  1. Pour 100 ml of cold boiled water over the gelatin and leave for 1 hour.
  2. Grind the cookies in a blender, then add melted butter and mix everything until you get a loose mass.
  3. Place the cookies and butter in a mold (24–26 cm in diameter), press down well, and place in the refrigerator while you prepare the filling.
  4. Bring the gelatin to a boil, but do not boil. Cool.
  5. Whip the cream with sugar.
  6. Add mascarpone, mix well.
  7. Add gelatin and mix again.
  8. Place the resulting mixture on the cookie base, smooth it out and put it in the refrigerator for 3-4 hours.

Chocolate Cheesecake

You will need:

  • 150 g shortbread cookies
  • 50 g butter
  • 100 g sugar
  • 120 ml whipping cream
  • 150 g dark chocolate
  • 2 tbsp cocoa powder
  • 200 g cream cheese

Preparation:

  1. Melt the chocolate in a double boiler, placing the bowl over a pan of boiling water, and then let cool.
  2. Grind the cookies into crumbs in a blender. Mix with melted butter and 1 tbsp. sugar and mix well.
  3. Press the resulting cheesecake base into the mold and put it in the refrigerator.
  4. Whip the cream, add the cooled melted chocolate and then cocoa powder diluted with a small amount of hot water. Mix everything carefully.
  5. Beat cream cheese with sugar. Combine with chocolate mass, stir.
  6. Place on the cooled base in the form. Put in the freezer for 1 hour.
  7. Place in the refrigerator for 30 minutes. Then the cooled cheesecake can be cut.

Blueberry Cheesecake with Nuts

You will need:

  • 500 g cottage cheese
  • 500 g sour cream
  • 1 cup sugar
  • 200 g nuts (almonds, cashews, walnuts)
  • 100 g blueberries or blueberry jam
  • 150 g butter
  • 200 g gelatin
  • 150 g dates or dried apricots

Preparation:

  1. Grind nuts and dates (dried apricots) in a blender and mix with melted butter, forming a base with sides.
  2. Dissolve gelatin.
  3. Beat cottage cheese, sugar and sour cream until smooth. Add gelatin and mix well again.
  4. Add blueberries or blueberry jam and mix well again.
  5. Pour the resulting mixture onto the cake base and refrigerate for 3-4 hours.
  6. When the cheese base has completely set, decorate the cheesecake with fresh berries or jam and serve.

Banana Cheesecake

You will need:

  • 350 g shortbread cookies (you can use "Yubileinoe")
  • 150 g butter
  • 3 bananas
  • 2 tbsp lemon juice
  • 450 g cottage cheese
  • 200 ml cream
  • 2 tbsp powdered sugar
  • 1.5 tbsp gelatin

Preparation:

  1. Grind the cookies in a blender and then mix with melted butter.
  2. Press the resulting mixture evenly onto the bottom of the cheesecake pan.
  3. Pour 6-7 tablespoons of hot water over the gelatin and stir until completely dissolved.
  4. Grind two bananas in a blender with lemon juice. Add cottage cheese, cream and powdered sugar. Beat everything until creamy, and then, stirring, slowly pour in the gelatin.
  5. Pour the resulting mixture onto the cookie crust and leave it in the refrigerator to set for 3-4 hours.
  6. Remove the finished cheesecake from the pan and decorate with bananas.

Cheesecake with cottage cheese and condensed milk

You will need:

  • 300 g cottage cheese
  • 300 g condensed milk
  • 250 g shortbread cookies
  • 200 g butter
  • 1.5 tbsp gelatin
  • 100 ml cream

Preparation:

  1. Soak gelatin in the amount of water indicated on the packet.
  2. Crush the cookies and mix with melted butter.
  3. Place the resulting dough into a baking pan and make sides.
  4. In a blender, mix condensed milk, cottage cheese and cream. Add gelatin and mix well again.
  5. Pour the filling onto the cookie crust.
  6. Leave the dessert in the refrigerator for 3-4 hours.
  7. If desired, the cheesecake can be decorated with berries.

Raspberry Cheesecake in Cups

You will need:

  • 9 pcs. cookies (any)
  • 150 g frozen raspberries
  • 2 tbsp cornstarch
  • 30 g sugar
  • 300 g Philadelphia or Almette curd cheese
  • 100 g cream 30% fat content
  • 250 ml cold water

Preparation:

  1. Crush the cookies.
  2. Lightly warm the frozen berries in a saucepan over low heat.
  3. Strain the separated juice, add half of the water, then starch and mix everything thoroughly.
  4. Add the remaining water to the berries, add sugar and put back on the fire.
  5. When the mixture is well heated, pour in the juice with starch in a thin stream, stirring continuously. Cool the finished jelly.
  6. Beat the cream cheese, adding cream little by little to make a cream cheese mixture.
  7. Place crushed cookies, curd cream and raspberry jelly in layers on the bottom of the glasses. Repeat layer by layer: cookies, curd cream and jelly.
  8. Decorate with mint leaves, berries and cream.

Tangerine Cheesecake "The Scent of Christmas"

You will need:

  • 300 g cookies
  • 150 g butter
  • 500 g cottage cheese
  • 200 ml cream 32-33% fat content
  • 150 g sugar
  • 20 g gelatin
  • 4 tangerines
  • 1/2 cup powdered sugar

Preparation:

  1. Pour 150 ml of cold boiled water over the gelatin and leave for 1 hour.
  2. Crush the cookies and mix with melted butter.
  3. Press the loose mass into the bottom of round molds lined with parchment paper. Cool.
  4. Heat the gelatin until dissolved.
  5. Beat the cottage cheese with cream and sugar until smooth. Pour in the cooled gelatin.
  6. Place into cookie cutters and refrigerate to set.
  7. Cover the mandarin slices with powder, after 30 minutes, when the juice is released, simmer for 5-10 minutes.
  8. Pour the sauce over the finished cheesecake and garnish with tangerine slices.
