Deruny are potato pancakes. They are extremely easy and quick to prepare, and they don't sit on the table for long because they are also very tasty.

To make Ukrainian potato pancakes, you will need:
150 g raw pork fat or with a meat layer (brisket, bacon)
0.5 kg potatoes
1 onion
1 bell pepper
1 egg
2 tbsp flour
ground black pepper, ground coriander, salt to taste.
How to cook potato pancakes:
Prepare the cracklings for the potato pancakes.
Cut the lard into small pieces and fry in a hot frying pan without a lid for 3-5 minutes. Add salt and pepper.
Depending on the frying time, you will get soft or crispy cracklings - to your taste.
Remove the cracklings, but do not pour out the fat - you will use it to cook the potato pancakes.
Wash and peel the vegetables.
Grate the potatoes on a fine grater.
Also grate the bell pepper on a fine grater.
Chop the onion. You can do this on a grater (or in a blender), but it is better to chop it finely, then the potato pancakes will not be runny and there will be no bitterness in them.
Combine the potatoes with the bell pepper and onion. If the vegetable mixture is too runny, squeeze out the excess liquid.
Add egg, flour, salt, spices and mix well.
Fry the potato pancakes in a heated frying pan with lard, using a spoon to make small flat cakes.
When the potato pancakes are browned on one side, turn them over to the other side.
Serve hot potato pancakes with cracklings and herbs.
Pork with potato pancakes, stewed in a pot
INGREDIENTS
- 600 g pork belly on ribs
- 1 large onion
- olive oil
- salt, freshly ground black pepper
For the potato pancakes:
- 1 kg potatoes
- 1 large onion
- 2 eggs
- 3-4 tbsp flour
- olive oil
- salt
METHOD OF PREPARATION
Step 1
Peel the onion and potatoes. Grate the potatoes on a fine grater, place in a colander set over a bowl. Salt the potatoes and leave for 3 minutes.
Step 2
Squeeze the potato mass well with your hands and transfer it to a large bowl. Carefully drain the liquid from under the potatoes, and add the starch that has formed at the bottom of the bowl to the potato mass.
Step 3
Peel and grate the onion, add to the potatoes and mix – the onion will prevent the potato mixture from darkening.
Step 4
Break the eggs into a bowl with the potatoes, add 3 tbsp of flour and mix. If the dough is too runny, add a little more flour.
Step 5
Heat olive oil in a wide frying pan and put 1 tbsp of potato dough. Fry the potato pancakes on both sides until golden brown.
Step 6
Cut the pork belly into small pieces. Peel the onion and cut into half rings. Heat a frying pan with 1 tbsp of olive oil and fry the belly until golden brown on all sides, add salt and pepper. Transfer the meat to a plate, add the onion to the pan and continue frying until the onion is soft, add a little salt.
Step 7
Place the pork and onion in the bottom of a large ceramic pot. Arrange the potato pancakes on top, overlapping them. Cover the pot with a lid and put it in the oven. Set the temperature to 160 °C and cook for 1 hour.
Potato pancakes with mushroom sauce
Recipe for potato pancakes
You will need:
- 3 large potatoes (approximately 500 g),
- one medium onion,
- 1 egg,
- 2 tbsp. whole grain flour,
- salt, pepper.
Preparation:
First, quickly grate the onion on a large grater. It is better to wet the onion first, and then immediately grate the potato. If it has given a lot of juice, then the excess can be drained.
Carefully beat the egg into the resulting mass and add sour cream. Mix everything carefully and spoon it into a frying pan with boiling vegetable oil.
Fry the potato pancakes over low heat on both sides.
Mushroom sauce for potato pancakes
You will need:
- 1 onion
- mushrooms 500 gr
- 50 g sour cream
- salt, pepper
- 1 tbsp flour
- garlic
- greens for decoration
How to cook:
To prepare the sauce, fry the onion in olive oil until translucent, add finely chopped mushrooms and cook until done.
Salt and pepper to taste. Season with cream or sour cream, bring to a boil and add garlic. Turn off the stove and leave the sauce to infuse.
Serve the hot potato pancakes, pouring sauce over them and garnishing with herbs.
