Spicy couscous with green beans and halloumi cheese
A hearty vegetarian dish. You can grill Adyghe cheese instead of halloumi. The dish will also be very tasty.
Ingredients

200 g green beans (you can use frozen)

175 g couscous

1/2 tsp cinnamon

1/2 tsp ground cumin

1/2 tsp ground coriander

300 ml vegetable broth

50 g sun-dried tomatoes (chopped)

200g Halloumi cheese
-
half a lemon (you only need the juice)

1 tbsp. olive oil
Preparation
- Boil green beans in boiling water for 5 minutes until bright green, drain and rinse with cold water. Mix couscous with spices and pour hot broth over. Cover and let stand for 5 minutes. Fry halloumi on both sides in a non-stick frying pan or grill pan for 2 minutes, brushing with oil if necessary.
Mix couscous with green beans and tomatoes, sprinkle with lemon juice and olive oil. Serve with pieces of halloumi, fresh herbs and figs.
