Toasts with vegetables and cheese

We will need:
White bread (or grain) - 6 thin slices,
Cheese - 100-150 g,
Eggs - 2-3 pcs.,
Milk - 4 tbsp. spoons,
Tomato - 1-2 pcs.,
Bell pepper (green) - 1 pc.,
Green salad leaves - 3 pcs.,
Parsley greens - a little,
Oil for frying,
Salt,
Pepper.

Grate the cheese. Remove the core from the tomato and chop finely. Chop the bell pepper, removing the seeds. Chop the parsley finely, leaving some for decoration. Combine half or most of the cheese with the tomato, bell pepper and herbs. Mix.

Beat the egg with milk, add cheese and mix. Salt and pepper to taste.

Place the vegetable mixture on a slice of bread, cover with a second slice and press down lightly. Soak with the egg-milk mixture with cheese.

Fry the toasts on both sides until crispy.

Serve toasts with lettuce leaves and garnish with parsley sprigs.
