Why do we love shashlik so much? Because it is tasty, fast and relatively inexpensive - after all, you only need meat. But at some point, shashlik ceased to be a desirable dish, I wanted variety and I started trying to cook something else on the grill. I hope you will like my personal selection of grilled dishes with recipes and recommendations.

Potato Kebab on the Grill

This is the most economical recipe - the best option for Belarusians and students. Take large potatoes of the new harvest, it is better to take white potatoes, as they are denser (red ones crumble into grains).
Cut the potato into thin slices, add salt, pepper, and then coat with vegetable oil or, better yet, goose fat. Thread the potato slices onto a skewer so that there is a distance of about 7-8 mm between them, no less, otherwise the potato will not be baked and will remain crispy inside. A special chic is if you put lard or bacon between the potatoes.
Cooking time is 20-30 minutes depending on the proximity to the coals.

Grilled Quesadilla

First, find a grill grate or any substitute, since you can’t make quesadillas on skewers.
The products you will need are:
  • Wheat or cheese flatbreads
  • Champignons
  • Tomatoes
  • Green
  • Cheese
You can add red chicken meat if you like, but a real quesadilla is generally prepared without meat.
The gist of the recipe: chop all the ingredients, grate the cheese, you can spread any sauce (ketchup, mayonnaise) on the flatbread. Sprinkle cheese on half of the flatbread, put the vegetables and sprinkle with more cheese, add pepper, fold the flatbread over and put it on the grill. Cooking time: 7 minutes.
Believe me, grilled quesadilla is a great dish with the smell of a fire. And unlike shashlik, quesadilla lasts longer, because you can eat it slowly and decorously, and when it cools down, it does not lose any of its taste.

Khachapuri on the grill

This option is very good for small gatherings around the campfire, when food does not play a particularly important role. You will need puff pastry (yeast is also possible) in sheets and cheese (suluguni or any similar, but not Adyghe).
Cut the dough into strips, stretch them with your hands (we are talking about field conditions). Thread a piece of cheese onto a skewer and wrap it with a strip of dough. It is important that your snack is airtight, otherwise the cheese will leak out.
Cooking time is about 10 minutes depending on the size of the khachapuri.

Grilled Shrimps

If you haven’t yet felt the breath of the crisis, you can safely try shrimp baked on skewers.
For a special taste, you can make shrimp in teriyaki sauce. To do this, mix honey with soy sauce, heat it up, add sesame and ginger if desired.
Cooking time is literally 5-7 minutes, do not overcook, otherwise the meat will become tough.
If you want to fry shrimp without sauce, you don’t have to peel them.

These seafood products are a free rein for the imagination, because they are made both whole stuffed, and in soy sauce, and squid rings in teriyaki. In my opinion, the latter is the most delicious recipe. I think there is no need to explain what to do, everything is clear anyway

For stuffed squid - wash, clean and fill with stuffing. 1 - crab sticks, onion, cheese, tomatoes, oil, greens. 2 - egg, champignons, oil, greens, you can use broccoli and rice.

For the rings - cut, dip in teriyaki and cook on the grill.

For regular baked ones, cut into long strips and thread onto skewers as tightly as possible.

Grilled squid cooks very quickly.
